Historically, the sugar market has been divided into two main segments: raws and whites. However, since the 1990s, technological developments in cane milling and changes in the structure of the world market have contributed to partially breakdown the boundaries between these two segments. This study presents the ISO's first benchmark survey on the various standards that govern production and consumption of sugar in more than 70 countries. This survey made it possible to analyze the key characteristics that define different grades of white sugar across the world and to identify variations in their definitions. The paper comprises a comparative examination of over 100 sugar standards split into four key parameters: polarization, color, moisture and ash content. The analysis is supplemented by an appendix containing important information of the standards surveyed, with references to document number, date of publication and issuing body. This study also presents a quantitative assessment of the world sugar trade by its main segments (raws and whites) and a qualitative discussion of the impact of sugar quality on pricing.
